While wanting to continue with the exploration of hot sauces around the world I stumbled upon a Turkish/Mediterranean hot sauce called Shatta. I loved the ideology of it in that there were only three ingredients: hot red peppers,vinegar, and salt! In modified Azapli tradition, I took our mild red hots, our hot hots, and our super hots and processed them exactly as they would in Turkey. I finished it off with a large container of Authentic Mediterranean Shatta which left some pulp and seeds giving it a totally unique texture! The result is a solid 6.5/10 and flavor is unlike anything I’ve made before. I’d say it may be the closest thing to a traditional “Hot Sauce” we’ve ever done.
