This is the 100 day ferment of our classic sauce below but with much less vinegar because of the brine so it’s much hotter and super funky!!
This is a blueberry, Scotch Bonnet, Habanero, sesame seed, kafir lime, pomegranate vinegar base with apple cider backing and a dash of white vinegar and lemon grape seed oil at the end. A bit of candied carrots and carmelized onion give a great umami sweetness that then rolls into A bright heavy heat!
